The World's Fluffiest Blueberry Pancakes

About the Recipe

This recipe comes from Uncle Nick who worked for years as a chef on fancy super yachts. In his efforts to please his very fussy customers he created this sensational recipe for the world´s fluffiest pancakes.. It is a three bowl recipe, but trust us, it is worth it all for the phenomenal fluff factor. We vowed we would keep it top secret, but here we go, sharing it with you!

Ingredients

  • 2 cups of flour

  • 2 tsp of baking powder

  • 1 tsp of bicarbonate of soda

  • 1/2 tsp of salt

  • 1/4 cup of sugar

  • 3 eggs

  • 1 1/4 milk

  • 1/4 cup white vinegar

  • 1 cup of Makemake Organic bluberries (can be fresh or frozen) 

Preparation

Step 1


Put the  flour, baking powder, bicarb, salt & sugar in a large bowl and mix well! 


Step 2


In a separate bowl , use a fork to whisk together the vinegar and milk until it is nice and frothy (this will add more air to your pancakes and more air = more fluff! (And shhhhh this step is the secret key to making the world`s fluffiest pancakes.)



Step 3


In a third bowl beat togher the eggs with a whisk or an electric beater. The more you beat the fluffier the pancakes will be! 



Step 4

Add the blueberries and  fold all the ingredients together.  DO NOT OVERMIX. This is very important if you want  super fluffy pancakes!


Cook up your beauties on high heat with butter. We use a giant electric griddle for this as we are impatient and cant wait for them to cook one by one in a pan. 


If you want to make them very fancy and even more nutritious you can decorate them with our Organic Blueberry Powder. 


Tip: small to medium size pancakes fluff up the best! 


An idea:   Sometimes we don't fold in the blueberries and just decorate the individual pancakes with them instead while they are cooking, making patterns and silly faces!
